This Slow Cooker Rice Recipe is practically "fool proof." You don't have to watch the rice carefully. You don't have to worry about the rice sticking (provided you grease the slow cooker as directed). And this Crock pot rice comes out fluffy every time.

Be sure to use long grain jasmine or basmati rice for this recipe, and check the rice after 1-1/2 to 2 hours. The newer slow cookers cook food much faster than the older models and the rice can burn if you have high-temperature-cooking slow cooker.


Ingredients

* 1 cup long grain converted rice or jasmine rice
* 1-1/4 cups water
* 1/2 tsp. butter (optional)


Preparation

1. Spray the Crockpot stoneware generously with cooking spray.

2. Add all the ingredients. Stir and cover.

3. Cook on low 1-1/2 to 2 hours. Lift lid. Check to see if all the liquid is absorbed. Taste to see if the rice is done. If not, add a little more water and cook 1/2 hour longer.

I like making Slow Cooker Rice in the Crockpot, so why not rice pudding? You eliminate the need to pre-cook the rice with this Crockpot Brown Rice Pudding Recipe , and the long, slow cooking process makes the brown rice perfectly tender without being overcooked. Coconut milk adds richness and just a hint (barely noticeable) of coconut flavor to this Crockpot brown rice pudding recipe.

Be sure to use a long-grain brown rice for this rice pudding recipe. I like jasmine or basmatic brown rice.

Cook Time: 4 hours
Total Time: 4 hours
Yield: 4 servings


Ingredients

* 1/2 cup long-grain brown rice (recommended: jasmine or basmati rice)
* 1 14 oz. can sweetened condensed milk
* 4 cups whole milk
* 2 tsp. ground cinnamon
* 1/2 cup sweetened dried cranberries or raisins


Preparation

1. Mist the slow cooker stoneware with cooking spray. Rinse rise.

2. Add all of the ingredients to the Crockpot, and stir. Cover, and cook on high for 3-5 hours or low for 5-7 hours.

Note: The length of cooking time depends on the size, shape and temperature of your Crockpot as well as the type of rice you use for this recipe. Newer slow cookers tend to cook faster and at a higher temperature, so check the rice pudding at the shortest cooking time to see if it's done. Bowl-shaped slow cookers tend to work well with this recipe and also tend to cook faster. Experiment, and let me know how it goes. Post a review.

Apple Pie Bars

Love apple pie, but don't feel like making a crust? These apple bars are perfect for you. The apple filling tastes just like apple pie. And the sweet streusel topping makes these apple pie bars melt in your mouth. I like to serve these apple squares warm, with vanilla ice cream on top. Add a drizzle of caramel sauce to these Apple Pie Bars for a really decadent treat!


Ingredients

* 1-1/4 cups all-purpose flour, divided
* 1 cup quick-cooking rolled oats
* 1/3 cup firmly-packed light brown sugar
* 1/2 tsp. baking powder
* 1/2 tsp. cinnamon
* 1/2 tsp. salt
* 1 cup butter
* 1 large egg, beaten
* 4 medium McIntosh, Granny Smith or Golden Delicious apples, peeled, cored and sliced
* 1/4 cup sugar
* 1/4 tsp. nutmeg

Crumb Topping:
* 1/3 cup rolled oats
* 1/3 cup all-purpose flour
* 1/3 cup sugar
* 1/4 cup butter


Preparation

1. Preheat oven to 350 degrees F. Spray a 9 x 13 baking dish with cooking spray.

2. In a large bowl, combine 1 cup of the flour, 1 cup of oats, brown sugar, baking powder, cinnamon and salt. With a pastry blender, your fingers or two knives, cut in butter until mixture resembles coarse crumbs. Stir in egg. Press into prepared pan.

3. In a medium bowl, toss remaining 1/4 cup of flour with apples, sugar and nutmeg. Spread over crust layer.

4. For topping, toss oats, flour and sugar together. Cut in butter with pastry blender or two knives. Sprinkle over apple layer.

5. Bake 30-38 minutes until apples are tender and top is golden brown.

Makes 24 large apple pie bars.
